We are currently developing a very special hotel in Scotland.
Set along the dunes of Islay, Queen of the Hebrides, The Machrie is undergoing extensive renovation and restoration and is due to reopen early summer 2018.

This hotel, with its 47 bedrooms, is also famous for its Links course, considered to be one of the most beautiful locations in the golf world, never mind being set on a magical whisky and nature island.

The commitment to create exciting experiences is a key philosophy and cornerstone of all Campbell Gray Hotels and with that in mind, we are now recruiting for passionate individuals to create a team for The Machrie to become a true destination.

Bartender

This is an opportunity for a dedicated and passionate Bartender to work as part of our team in ‘18’, our sophisticated and colourful Restaurant & Bar – the social hub of our luxury boutique hotel.  The role involves:

  • Working a shift pattern, 5 days over 7. Full times hours are 40 hours per week.
  • Providing consistently good customer service
  • Assisting the Food Service team during busy periods
  • Working as part of an effective team
  • Demonstrating excellent communication skills
  • Maintaining a clean, tidy and well presented Bar

Food & Beverage Service Assistant

We are currently welcoming applications from enthusiastic and energetic candidates who take pleasure in delivering high quality service within a high end casual dining environment. Experience from within a similar style of Restaurant or Hotel would be advantageous however full training is provided, so we’re particularly interested in character and attitude. The role involves:

  • Working a shift pattern, 5 days over 7. Full times hours are 40 hours per week.
  • Providing consistently good customer service, including breakfast, lunch, dinner, afternoon tea, room service and banqueting / private dining events
  • Assisting the Bar team during busy periods
  • Working as part of an effective team

  • Preparation of the Restaurant / Event Spaces for Service periods

Greenkeeper

The Machrie Links Course is renowned as one of the worlds finest destination Golf Links Courses and is a key part of Scotlands Golfing Heritage. We now have an opening for a dedicated and professional Greenkeeper who takes pride in ensuring the course and all the associated facilities are fully maintained and impeccably presented for the enjoyment of our members and guests. The role involves:

  • Completion of effective turf maintenance by following established schedules and maintenance programmes
  • Work effectively as part of a dedicated team
  • Collection and interpretation of data
  • Looking for and identifying possible turf problems
  • Calibrate, apply and record fertilizer, pesticide and seed applications
  • Effectively operate a wide range of machinery and equipment
  • Assist in the completion of scheduled workshop activities such as: vehicle checks, setting height and quality of cut on mowers

Chef de Partie 

Our exciting and talented kitchen Brigade is growing and we are now looking to add a dynamic and talented Chef de Partie to the team. This role will be ideally suited to someone with previous experience at a similar level in a busy hotel or destination restaurant kitchen where high quality food is served to guests with high expectations. Our focused team of Chefs are committed to the creation of exceptional dishes, packed with flavour and well presented.  This role involves:

  • Working a shift pattern, 5 days over 7. Full times hours are 40 hours per week.
  • Producing consistently high standards of food across each service period, including: breakfast, lunch, dinner, afternoon tea, room service and banqueting / private dining events
  • Maintaining a clean and tidy work station
  • Working as part of an effective team
  • Demonstrating excellent communication skills
  • Ensuring compliance with all health, safety and food hygiene standards
  • Completion of mis en place for each service period
  • Having a thorough knowledge of the different menu items
  • Supervision and training of Commis Chefs when required
  • Being able to assist with food allergies and differing dietary requirements
  • Assisting with stock and waste management

Junior Sous Chef 

This is the perfect opportunity for a passionate and career minded professional chef keen to contribute to our success in establishing The Machrie as a destination dining venue, not just on Islay, but in Scotland. Ideally suited to a Senior Chef de Partie from a larger brigade or an existing Junior Sous from a smaller luxury property or high quality Restaurant.

  • Working a shift pattern, 5 days over 7. Full times hours are 40 hours per week.
  • Producing consistently high standards of food across each service period, including: breakfast, lunch, dinner, afternoon tea, room service and banqueting / private dining events
  • Maintaining a clean and tidy work station
  • Working as part of an effective team
  • Demonstrating excellent communication skills
  • Ensuring compliance with all health, safety and food hygiene standards
  • Completion of mis en place for each service period
  • Effective management of the Kitchen operation in the absence of the Head Chef / Sous Chef
  • Having a thorough knowledge of the different menu items
  • Supervision and training of other team members, including KP team
  • Being able to assist with food allergies and differing dietary requirements
  • Assisting with stock and waste management

Receptionist 

This key ambassadorial role plays an important part in the whole guest experience and as such we are looking for a genuinely engaging, customer focused personality who can deliver memorable first impressions, multi task, and demonstrate exceptional organisational skills. Experience of a similar role in a customer facing, service delivery environment would be advantageous together with strong administrative skills, IT abilities and faultless attention to detail. (We’re not asking for much!) This role involves:

  • Working a shift pattern, 5 days over 7. Full times hours are 40 hours per week
  • Providing consistently good customer service both in person, via email and on the telephone
  • Working as part of an effective team
  • Demonstrating excellent communication skills
  • Maintaining a clean, tidy and well presented work area
  • Having a thorough knowledge of all Hotel services and products
  • Accurately taking individual and group accommodation reservations
  • Updating the Hotel booking and billing IT systems
  • Preparation of daily reports
  • Confidentially managing guest and other sensitive data in line with Company procedures
  • Being able to provide guidance on Islay activities, heritage and destinations

Finance Assistant 

A vacancy currently exists for a financially astute, numbers oriented and detail conscious team player – with a sense of humour – to join our Finance Team. Behind the scenes, but not behind the door, this is an important role supporting the Financial Controller to track our expenses, reconcile our revenue, and prepare the weekly, monthly and year end accounts. Prior experience with Sage would prove beneficial as would a background of working within a busy finance team. This role involves:

  • Working mainly Monday to Friday based on a 40 hour week. Some additional hours may be required, including occasional evenings or weekend working
  • Working as part of an effective team
  • Demonstrating excellent communication skills
  • Maintaining a clean, tidy and well presented work area
  • Having a thorough knowledge of all Hotel systems and products
  • Accurately taking individual and group accommodation reservations
  • Updating the Hotel systems and preparing reports: Sage, Jonas, Protel as required
  • Reconciliations of: revenue; expense accounts; bank accounts; journal entries
  • Confidentially managing guest and other sensitive data in line with Company procedures
  • Flexibility to assist guest facing teams as and when required
  • A polite, professional and engaging telephone manner for dealing with external suppliers
